Smokey No-nova

These little bites make a great brunchy appetizer!

I was in a fun and fancy free mood, I was also craving a bagel and lox. A quick google search confirmed a plant version is possible, my new mission: Create and devour.

Disclaimer*, these carrots will not fool anyone into thinking it is salmon. However, they make a delicious and satisfying alternative!

I used a peeler to shave my carrots nice and thin. I also opted to keep my carrots raw. Just massage them, let them marinate for a few minutes and they are ready to go!


I decided to serve my carrots on toasted baguette slices but these carrots can be added to a bagel, salad, sandwich or pizza!

You can use your favorite 'cream cheese or nut cheese' spread on the toast points. I made a quick sunflower seed spread.


Smokey no-nova

INGRDIENTS:

  • 4-6 Raw carrots

  • 1 Tablespoon liquid smoke (sub worcestershire sauce in a pinch)

  • 1 teaspoon woresterchsire

  • 2 teaspoons kelp seasoning (sub garlic powder)

  • 1/2 teaspoon dulce flakes (sub onion powder)

  • sea salt or smoked salt

  • sunflower spread* or your favorite cream cheese or nut cheese

  • 1 organic baguette loaf*

DIRECETIONS:

  1. Peel carrots into large bowl

  2. Add all liquid and powder seasonings

  3. Massage and squeeze the spices into the carrots - let sit

Notes:

*optional

substitutions will give you less of a smokey, seafood taste and more of a savory bite.

  • Sunflower spread

  • 3/4 cup sunflower seeds

  • garlic powder

  • onion powder

  • sea salt or smoked salt to taste

  • 2 Tablespoons of nutrimental yeast (maybe more add a little at a time)

  • 1/2 teaspoon camu camu**

Directions:

Add all ingredients to small blender, blend until creamy. Adjust seasoning as needed.

notes:

*Camu Camu is a badass, super food, 1/2 teaspoon provides 400% of our DV of vitamin C! It is not necessary for this recipe but adds another layer of flavor and nutritional value!
