16-32 Cups of popped popcorn
2 Cups Brown Sugar
1 Cup Earth Balance (vegan friendly butter)
1/2 Cup Maple Syrup (sub agave)
1/2 t baking soda
1/2 t salt (optional)
1 t maple or vanilla extract (optional)
Directions: Preheat over to 250 degrees
Bring brown sugar, butter and maple syrup or agave to a slow boil, let small bubbles go for 5 minutes without stirring.
Remove from heat and stir mixture until sugar has melted.
Stir in baking soda, salt and vanilla if using.
Pour this mixture over popcorn and toss or stir with wooden spoon to coat.
Lay out popcorn on parchment paper, bake for one hour.
Stir every 20 minutes, moving popcorn around.
